Chef Ming Tsai prepares bok choy two ways. First up is Red Roast Chicken with baby bok choy and sweet potatoes spiced with red wine, Thai bird chilis and star anise. Next is a vegetarian version that includes Red Roast Squash, baby bok choy, sweet potatoes, scallions, garlic and ginger. Ming also stirs up cocktails -- a Five Spice Old Fashioned for Ming and a Five-Spice Black Tea for Henry.

2. Okonomiyaki/Japanese Pizza
Chef Ming Tsai cooks up two versions of Okonomiyaki. He makes a delicious Smoked Salmon and Crispy Fennel Okonomiyaki, and then a vegan Okonomiyaki made with rice flour, shiitake mushrooms and cabbage, seasoned with garlic and fresh ginger. To cool things down, he mixes a refreshing Cucumber-Mint Saketini for himself and a Cucumber-Mint Spritzer for Henry.

3. Ginger-Miso
Miso, ginger and sushi rice are featured today. Chef Ming Tsai cooks salmon coated with shiro miso, minced ginger, sesame cucumbers and sushi rice. Then he prepares a vegetarian version using Japanese eggplant and miso glaze, which he serves on top of sushi rice cakes. He also shakes up two versions of a cocktail -- an Orange-Ginger Wine Spritzer and a non-alcoholic version for Henry.

13. Along the Rhine
Ming Tsai travels along the Rhine, cooking with some of the best chefs in Europe and sampling the local cuisine. Dishes include Kohlrabi with Wild Herbs and Chanterelle Vinaigrette and Choucroute Royale Garnie with Bacon and Pork Liver, a dish built around salted and aged cabbage.
