Rachel Allen - All Things Sweet

Rachel shows how to shake up your traditional dessert menu and serve up something a little different with some exciting flavours and aromas that will make your Christmas one to remember. She'll be serving up: Festive fruity steamed pudding; Mulled port pears with port jelly; and Spiced plum tarte tatin.

America has given us some of our best-loved cakes and desserts, and Rachel pays homage to the nation with the sweetest tooth with her own take on some good ol' US classics. On the menu are: Fluffy blueberry pancakes with maple syrup, and Cinnamon and maple oat cookies; Apple and cinnamon baked cheesecake; and American chocolate fudge pie.

Rachel takes her inspiration from the continent for another mouthwatering selection of gorgeous desserts. On the menu are: Lavender and honey panna cotta; Orange caramel choux puffs, and Choux nuts with cinnamon sugar and pastry cream; and Gooseberry Clafoutis.

No celebration is complete without some sweet and indulgent centerpieces to serve a crowd and Rachel shows how to turn any occasion into an extravaganza with these fabulous party showstoppers: Salted caramel cupcakes; Nectarine and sloe gin jelly trifle; and Chocolate meringue cake.

Rachel cooks up these sugary treats that may be designed for children, but are just as enticing for grown ups: Milk chocolate mousse, caramel sauce, toffee popcorn; Crunchy chewy ginger cookies, and Chocolate and vanilla swirl biscuits; Deep fried honey puffs, and Milk ice cream.

Rachel declares this programme a guilt-free zone as she serves up some deliciously indulgent dishes. On the menu are: Gooey date and stem ginger pudding; Layered mocha mousse coffee meringue; and Chocolate coconut cake.

Rachel reveals some sweet-making secrets that would put even Willy Wonka to shame. In her selection of pick and mix are: JR's rose water marshmallows; Ballymaloe vanilla fudge and Sesame and honey halva; Chocolate and candied orange dates; and Chocolate fruit and nut clusters.

Even a home-cooked treat can whisk our taste buds off to far-flung lands. Rachel presents a selection of recipes using exotic spices and other ingredients for a truly international sweet menu: Baklava; Date, cardamom and ginger upside-down cake; and Pistachio and saffron kulfi.

For anyone with a passion for chocolate, you can never have too much of a good thing. Rachel takes us to chocolate heaven with these sweet dishes that showcase one of our favourite guilty pleasures: Chocolate and hazelnut praline ice cream; Roasted plums with white chocolate sauce; and Raspberry and white chocolate meringue roulade.

Rachel serves up the flavors of summer with some scrumptious and colorful treats you can enjoy at any time of the year. On the menu are: Strawberry and rhubarb cobbler; Nectarine custard tarts; and Yoghurt and elderflower cream with poached rhubarb.

Rachel gives a masterclass in mouth-watering desserts that showcase the flavours of fresh fruit. On the menu are: Poached peaches with raspberry sherbet; Prosecco and raspberry jelly; Watermelon ginita; Melon popsicles; Ivan's Coconut; and lime ice cream with mango in mint syrup.

The chef demonstrates items of confectionery for afternoon tea, making vanilla custard slice, mango and lime drizzle cake, and lavender sponge with rhubarb curd.

Rachel puts a tasty twist on some classic dishes to show how even the most traditional desserts can be given a tantalizing new lease of life. On the menu are: Salted caramel crème brûlées, Meringues with pink grapefruit curd and cream; and Apricot fool with cardamom shortbread fingers.
